MATCHA of the MOUNTAIN ~ Ceremonial Grade

We are truly honored to be able to offer this grade of matcha.
Matcha of the Mountain is similar in flavor profile to our long time favorite Matcha of the Moon, but somehow one step richer, more velvety and overflowing with savory sweet umami goodness.
Quantities are limited and at this point it is unclear if/when the garden in Kyoto, Japan, will have more available. But we'll remain hopeful that this isn't the last time we'll get to enjoy the experience that is this tea.
Each leaf that goes into the creation of this matcha is specifically hand picked for this tea.
Matcha of the Mountain is properly suitable for ceremony. This means that you can not only prepare this Matcha the typical way, Usucha (the way our directions below suggest), but you can also make Koicha from this Matcha. Koicha is the way it is prepared for ceremony and is quite strong as it involves twice the matcha powder (or more) and less water. It takes a premium ceremonial grade Matcha to properly make and enjoy this stronger method of preparation as it’s able to maintain a delicious smooth richness even while being so concentrated.
All our Matcha is shade grown for 20-30 days to create some of the most vibrant and smooth Matcha with a very high L-theanine content. This the amino acid found in the tea plant that has a brain soothing, uplifting quality and balances out the tea’s caffeine for a perfect stimulating alertness (:
Flavor profile & feel: Velvety rich, sweet cream, vegetal, savory, very deep & mellow.
Preparation:
- Sift Matcha to break up any clumps. This step goes a long way in creating a rich frothy cup!
- Add 1 tsp of Matcha to bowl.
- Pour in 2 ½ - 4 oz of 150º-175º F water.
- Whisk until a rich froth is created.
Enjoy immediately!
Tips: Use more or less water/matcha based on flavor and strength preference. Cooler temperature water creates a softer/sweeter cup.
All of our Japanese green teas come from a small farm in Uji, Kyoto, Japan. This area is widely regarded as one of the finest tea growing regions in the world and particularly famous for producing some of the best premium green teas like Gyokuro and Matcha.
